
Continental Rice Casserole

1/4 minced onion |
1/4 c. almond slivers |
1 c. UNCLE BEN'S® ORIGINAL CONVERTED® Brand Rice |
2-1/4 c. chicken broth |
pinch salt |
pinch pepper |
1 c. cooked chicken, cubed |
1 c. cooked beef, cubed |
1 c. cooked ham, cubed |
1 c. grated cheddar cheese |
1/4 c. sweet white wine |
1 Tbsp. chopped green celery tops (optional) |
Directions:
1. Sauté onion and almonds until golden. Stir in rice and sauté until light brown.
2. Add broth, salt and pepper. Bring to a boil, cover and simmer 15 min.
3. Stir in chicken, beef, and ham. Return to boil, cover and simmer 10 min.
4. Pour into 2-1/2 quart casserole. Sprinkle with cheese and wine. Bake 10-15 min. in 350°F oven. Garnish with celery tops, if desired.
